Head Brewer and dear friend Guillaume of Le Ketch came by the brewery and pub in April to hang out and help brew our first-ever Double IPA with 100% New Zealand hops.
We used his approach and techniques in our process: lots of oats and wheat in the mash, along with honey in the boil, creating a super creamy and fluffy base that was then hammered with a boatload of Nelson, Rakau, Southern Cross, and finished with Peacharine Hop Kief in the brite.
Super hazy, super juicy, and super tropical, without a doubt one of this year’s standouts.
